Bottles of Hawaiian Chili Pepper Sauce from Kauai Juice Co can be found in restaurants all over the island of Kauai. This variant, labeled either “Kauai Habanero” or “Chocolate Habanero” depending on when the bottle was made, is a classic take on a vinegar-driven hot sauce. It’s not unlike Tabasco, but less strained, leaving tiny bits of Habanero pepper and other veggies in an otherwise thin sauce. It really does bring the heat as well. The fermented chocolate habanero peppers are locally grown, and carry an estimated 425,000 Scoville Heat Units. It’s easy to get carried away with this sauce due to the excellent balanced flavor, but those habaneros have a way of reminding you who’s boss.
Ingredients: apple cider vinegar, fermented chocolate habanero, fermented Hawaiian chili pepper, carrot, onion, garlic, Hawaiian sea salt.
